  • Physicochemical analysis of Colombian food matrices with agroindustrial potential.
  • Development and application of nanomaterials for the food industry.
  • Extraction and encapsulation of substances of interest in the food industry.

  • Spectroscopic study and profiling of carotenoid compounds from food matrices with high agroindustrial potential for the extraction and microencapsulation of yellow-orange dyes (2018-2020).
  • Development of antimicrobial nanofibrous membranes with potential application in the field of active food packaging and pharmaceuticals (2018-2020).
  • Exploitation of food matrices with coloring and sweetening potential for use as a natural additive in processed foods (2017-2019).
