Thanks to the nutritional characteristics of milk, dairy products are one of the staple foods in the daily diet. However, as with other foods, not only its composition is important, but also its quality and safety.
In Colombia, the quality of raw milk is continuously improving. Free trade agreements with countries that produce milk and its by-products have increased the country's interest in improving the physicochemical and microbiological quality of milk.
